The Best “Mashed Potatoes” aka Cauliflower with help from Blendtec

I’m gonna go ahead and call today, Soulfood Sunday. It’s the day after we grocery shop so I feel like the world is my oyster when it comes to deciding what we eat. Nothing makes me happier than a full fridge. I guess it’s because I reflect back on my college days when the contents of my fridge consisted of beer and takeout. Yikes! What a long way I’ve come! I have shared the recipe to my “mashed potatoes” aka mashed cauliflower on my insta stories numerous times. Each time I do, I get begged to put it on my blog so here it is. Finally in a space that won’t disappear in a day. We eat this weekly in our house and the kids love it. I am talking about, will lick their plates clean, love it so much! It takes less than 15 minutes to make and that’s mostly because of my handy dandy Blendtec blender. I love how smooth they get by blending them and I don’t have to do any work but dump all the ingredients in, put the top on and press a button. You can’t get much easier than that! If you decide to try this recipe for yourself, make sure to tell me how you like it. I’ve teamed up with Blendtec to give my readers a free Twister jar ($129.95 value) with the purchase of any blender! Use code: LITTLESOUTHERN for the promotion. I received these products in exchange for an honest review. All opinions are my own. Read my disclaimer page for more information.
