Grapefruit + avocado + Dijon mustard dressing = yum!

Oh yea, meet my new main food love! This salad creation is one that I owe all to my friend, Stephinee. I am lucky to have a few good friends in my life and she is definitely one of them! Along with just being great, she always gets me on a food level. I was at her home a few weeks ago for a salad-in-the-jar party and she wiped up this combo. Y’all, I actually said “what is THAT?!” Because it didn’t look appealing but she convinced me to try it and everything made sense.

The combo of the grapefruit, avocado, greens and dijion lemon dressing was just perfect. I’m not even ashamed to say that I eat it multiple times a week now. Baby girl Scott loves it just as much as I do! The kids even like it and honestly, I’ve ended up making them smaller versions because if not they will take mine, hahahahaha. My kids aren’t always on the same food wave length but with this salad they are! I see this being a main staple in my food routine for quite sometime. You could top it with shredded chicken, a turkey burger, shrimp or salmon and it would be even better! Note: I did use shredded chicken for the one pictured.

Ingredients:
2 small or one large avocado, sliced into cubes
1 large grapefruit peeled and cut into wedges
handful of your favorite lettuce

dressing:
1-2 tbsp dijon mustard
juice of 1/2 a lemon
himalyan pink salt and cracked pepper to taste
2 tbsp avocado oil or EVOO

Recipe:
1. mix ingredients of dressing and whisk together
2. make your salad
3. top with dressing and enjoy!
