Family Friendly Meal – Unstuffed Cabbage Rolls

I am so excited to bring it back! RECIPES that is! Ya’ll, I haven’t been my usual self – cooking 3 plus meals a day because post partum isn’t that time for me. I’ve been really dependent on my friends and family bringing our meals and also local restaurants for the other times. After a few weeks, I am getting back into a cooking groove and it makes me so happy. I have a few meals that we do eat on repeat but I am really focused on revving up our weekly menu.

One of the things I love are stuffed cabbage rolls but they are a pain in the butt to make so, I made an easier version that tastes the same. Derrek, Nolan and Scarlet Reese scarfed them down… Harper is more of a picky eater so it took some begging for her to try. Ultimately, everyone loved this and it was so easy to make.

Ingredients:
2 pounds ground beef
1 large onion, chopped
1 head of cabbage, chopped
2 cans of diced tomatoes
1 can of tomato sauce
1/2 cup of beef broth
2 cloves garlic, minced
2 teaspoons of salt
1 teaspoon of black pepper

Recipe:
1. Cook and stir beef, garlic and onion in a saute pan until browned and crumbly, 5 to 7 minutes; drain and discard grease.
2. Add cabbage, tomatoes, tomato sauce, beef broth, salt, and pepper and bring to a boil.
3. Cover, reduce heat, and simmer until cabbage is tender, about 30 minutes.
